Acai (ah-sigh-ee) is a small, dark purple berry that grows on a species of palm tree that thrives throughout tropical regions of South America. To create Navitas Naturals Acai Powder, organic acai berries are sustainably harvested in the Amazon rainforest, freeze-dried, and then milled into a dark purple powder that retains the vital nutrients and flavor of the fresh fruit. Acai is very low in sugar, but it’s not low in flavor. It has a bold tropical fruit taste that is a hybrid of blackberries, raspberries, and dark chocolate. Acai powder is an ideal addition to yogurt, smoothies, chocolate, drinks, and desserts. Place a cup of the bananas into a food processor fitted with the “S” blade, and add the acai, maple syrup, and vanilla. Begin blending, and slowly add the remaining banana chunks while the machine is running. Process for about a minute, until frosty and smooth and turn off machine. Do not over-process or the bananas will become overly melted. Transfer to a serving container and enjoy at once, or cover and place in freezer until ready to serve. Gelato’s texture is best when consumed right away. Yield is 4 servings.
